Morkootaan or mor kuzhambu is one of my favourite recipes. It is one of the kerala recipes. You can make this with Chembu(Colocassia), Elavan(Ash gourd), Pooshani(White pumpkin), Urulai kizhangu (Potato), vazhaikaai (plantain).
INGREDIENTS
Buttermilk – 250 ml or 1 large glass
Curry leaves – few
Turmeric powder -A pinch
Salt – As required
Vegetables (White pumpkin/potato/plantain/yam) – few pieces
For Tempering
Coconut oil – 2 tbsp
Mustard seeds – 1 tsp
Curry leaves – few
For grinding
Cumin seeds – 1 tbsp
Green chillies – 3
Coconut – 1/2
- Take any one of the given vegetables, cut into a medium sized cubes and pressure cook it.
- In a kadai, add the cooked vegetables with little water, salt and allow it to blend for five minutes.
- Now add the buttermilk and turmeric powder.
- Simmer the stove and allow it to form foam.
- Now switch off the stove and keep it aside.
- Grind the cumin seeds, coconut and green chillies into a smooth paste.
- Mix it with the buttermik.
- Serve with hot rice and papadam.
Note: When you have an excess buttermilk you can make this gravy.
