Corn Cheese Quesadilla
Equipment
- 1 Veg chopper / Mixie
- 1 Skillet
Ingredients
- 6 no Multigrain Tortilla
- 8 tbsp Mayonnaise
- 200 gm Mozzarella Cheese for 6 Quesadilla
- 4 tbsp Butter to cook Quesadilla
For Stuffing
- 2 cups Corn Kernals
- 6 cloves Garlic
- 1 no Onion
- 1/2 no Capsicum
- 2 - 3 tsp Red chilli powder
- 1 tsp Cumin powder
- 1/2 tsp Chilli flakes
- 1 tbsp Mixed herbs
- 1/4 tsp Turmeric powder
- As req Salt
Instructions
To make Stuffing
- Boil the corn, drain the water and add it in a food chopper to shred it coarsely.
- In a Pan add oil, finely chopped garlic and saute it.
- Then add the chopped onions and saute until it turns transparent.
- Once onion turns transparent, add the finely chopped capsicum.
- Then add the shredded corn and mix well.
- At this stage add salt, red chilli powder, cumin powder, red chilli flakes and Mixed Italian herbs.
- Mix the spices with the vegetables and cook for couple of minutes.
- The stuffing for Corn Cheese Quesadilla is ready.
Making Quesadilla
- Take Tortilla and place it on a plate or a flat surface.
- Spread mayonnaise on the tortilla.
- Now place the stuffing on one half of the tortilla.
- On the stuffing add some grated Mozzarella cheese. The amount of cheese depends on your taste.
- Now fold the tortilla and it looks like a semi circle. Press the end so that the stuffing stays intact.
- Heat the skillet and add butter.
- Place the folded Quesadilla and cook in low to medium flame.
- Flip and cook on the other side too.
- Press it with a flat spatula gently.
- The tortilla will start becoming brown an crisp and the cheese melts.
- Cut the Quesadilla with pizza cutter and serve hot or pack it for lunch box.

- I opted for a multigrain tortilla to keep it on the healthier side, but you can use any type of tortilla you prefer.
- Since I didn’t have taco seasoning on hand, I substituted with my own choice of spices. That said, taco seasoning really enhances the overall taste!
