Ingredients
  

  • 3/4 no Pineapple
  • 1/4 no Pineapple to grind
  • 1/2 tbsp Jaggery
  • 1/4 tsp Turmeric powder
  • As req Salt
  • 1 Cup Curd Whisked well

To grind

  • 1/4 no Coconut
  • 3 no chillies Green Chillies
  • 1/2 tsp Mustard

To temper

  • 2 tsp Coconut oil
  • 1 tsp Mustard
  • few Curry leaves
  • 2 no Red chillies

Instructions
 

  • Heat coconut oil in a pan and add mustard seeds. Once they splutter, add curry leaves.
  • Chop 3/4th of Pineapple to small cubes. Add the chopped pineapple pieces and sauté briefly.
  • Add jaggery, turmeric powder and salt.
  • Pour in some water and cook until the pineapple becomes soft and tender.
  • Take the remaining pineapple pieces and grind them into a smooth paste. Keep this pineapple puree aside.
  • Grind fresh coconut, mustard seeds and green chilli with a little water to make a smooth paste.
  • Once the pineapple is cooked, add the ground pineapple puree and coconut paste to the pan.
  • Mix everything well and allow it to cook until the raw smell of the coconut paste disappears.
  • Finally, whisk the curd well and add it to the pan. Mix gently until everything is well combined.
  • Avoid boiling the pachadi after adding the curd.
  • The gentle heat is enough to bring everything together while keeping the pachadi creamy and smooth.
