Gond Ladoo, also known as Edible Gum Ladoo, is a cherished winter treat in North India. Crafted from a blend of wheat flour, edible gum (gond), nuts, seeds, dried dates, sugar, and ghee, this ladoo is not just a delight to your taste buds but also a powerhouse of nutrients. I learnt this recipe from one of my friends and I have posted that version beforehand itself. In this recipe, we utilize Acacia gum, a variant known for its warming properties and health benefits. Gond is also called as edible gum in English and Dink in Marathi. It is believed that Gond / Edible gum ladoo will help in reducing leg pain and strengthen the bone. Before diving into the delicious world of Gond Ladoo, let's explore the types of Gond available and some crucial preparation tips.
Begin by heating a pan and adding ghee. Introduce the edible gum to the pan.
Roast the gum until it puffs up completely. Once achieved, drain off the excess ghee and set the puffed gum aside.
Using the same pan, add wheat flour and gently roast it over a low to medium flame until it emanates a fragrant aroma and its colour darkens. Remove from heat thereafter.
Crush the roasted edible gum with a masher and combine it with the roasted wheat flour in a large mixing bowl.
Nuts and Seeds Roasting
Add more ghee to the pan to roast cashews, almonds, and pistachios. Once done, transfer them to a mixer jar.
Roast deseeded dried dates and add them to the jar alongside the nuts.
Sequentially roast pumpkin seeds and melon seeds, adding each to the jar post-roasting.
Finally, roast dried coconut and include it in the mixer jar as well.
After allowing all the roasted ingredients to cool, grind them coarsely.
Mixing and Shaping
Mix the ground nuts, seeds, and coconut with the wheat flour and gond mixture thoroughly.
Add cane sugar to the mix, ensuring everything is evenly distributed.
Proceed to shape the mixture into small, round balls to form the Gond Ladoos.

This recipe can be halved or doubled or tripled.
If you are not able to make ladoos due to the mixture being dry, add a teaspoon of ghee, mix and form ladoos.
If the ladoo cannot hold shape and flattens then it means there is more ghee. Let the mixture cool completely and then shape into ladoo.
Ensure the edible gum is roasted well to avoid any stomach discomfort.
You can adjust the quantity of nuts and seeds according to your preference.
Store the ladoos in an airtight container to keep them fresh.
