Wheat Masala Puttu

Wheat Masala Puttu is a beautiful blend of tradition and health. Loved across South India, puttu is one of those timeless dishes that brings warmth, comfort, and homemade goodness to every meal. It is a healthier variation of classic rice puttu. Made using wheat flour, it has a rich earthy taste and a slightly denser texture that feels wholesome and satisfying.

Equipment

  • 1 Puttu maker

Ingredients
  

  • 2 Glass Wheat Puttu flour 250 ml glass
  • 1-1.25 Glass Water To sprinkle
  • 2 tbsp Coconut To assemble
  • 1 tsp Mustard
  • 3 no Green Chilli Finely chopped
  • 2 inch Ginger Finely chopped
  • 1 no Carrot grated
  • 1 no Onion Finely chopped
  • 4 tbsp Coconut grated
  • Few Curry leaves
  • Few Coriander leaves

Instructions
 

Prepare the flour Mixture

  • Take the Wheat puttu flour in a bowl. Add salt and sprinkle water little by little while mixing with your fingers.
  • The flour should resemble moist crumbs. When pressed in your palm, it should hold shape lightly and crumble easily.
  • Do not add too much water, or the puttu may become hard and sticky.

Prepare the Masala

  • Heat oil in a pan. Add mustard seeds and let them splutter.
  • Add curry leaves and chopped green chili. Then add onions and sauté until soft and transparent.
  • Mix in grated carrot and capsicum. Cook for 2–3 minutes.
  • Add turmeric powder and salt. Mix everything well and switch off the flame
  • The vegetables and spices give the puttu a flavourful savoury twist while adding colour and nutrition.

Combine the Masala with Flour

  • Add the prepared masala mixture to the wheat flour and mix gently until evenly combined.
  • The flour should remain crumbly and moist.

Layer the Puttu

  • In a puttu maker, first add a layer of grated coconut. I added Puttu flour as I don't prefer too much coconut in my Puttu.
  • Then add the masala wheat flour mixture until half.
  • Then add two tablespoon of grated coconut.
  • Again add the Masala wheat puttu flour and finally with grated coconut. I added coconut only in the middle.
  • Coconut layers help keep the puttu soft, moist, and aromatic.

Steam the Puttu

  • Steam the puttu for 8–10 minutes or until steam releases fully and the aroma fills the kitchen.
  • Carefully remove the puttu from the mold.
