Vella Aval

Vella Aval is a traditional South Indian sweet made with flattened rice (poha/aval), jaggery, grated coconut, and flavoured with cardamom. This no-fuss, no-cook sweet is commonly prepared during Krishna Jayanthi (Gokulashtami) and other festive occasions as a quick neivedhyam (offering). It's naturally vegan, gluten-free, and made without refined sugar.

- 1 Cup Aval / Poha
- 3/4 Cup Jaggery
- 2 tbsp Coconut shredded
- 3/4 Cup Water
- 1 tbsp Ghee
- 1/2 tsp Cardamom powder
Rinse the poha (flattened rice) thoroughly in water and drain it well. Set aside.
In a pan, combine jaggery and a little water. Heat gently until the jaggery melts completely.
Strain the jaggery syrup to remove any impurities or dust.
Return the strained syrup to the stove and boil.
Add ghee and cardamom powder. Mix well to blend the flavours.
At this stage add the Poha and mix well.
After 2 minutes, add grated coconut.
Mix gently until everything is well combined and the poha absorbs the jaggery syrup.
Serve warm or at room temperature. Your delicious Vella Aval is ready to enjoy!
