Pumpkin Sauce Pasta

Pumpkin Sauce Pasta is the perfect combination of comfort and nutrition. Made with fresh pumpkin, garlic, onions, herbs, cream, and cheese, the silky pumpkin sauce beautifully coats every strand of pasta, creating a rich and satisfying meal that's both wholesome and delicious.

Ingredients
  

To make Pumpkin Sauce

  • 1 tbsp Oil
  • 10 cloves Garlic
  • 200 gm Sweet pumpkin sliced
  • 1/2 no Red Capsicum
  • few Black peppercorn
  • 100 ml Milk

Other Ingredients

  • 1 Cup Wheat Pasta 250 ml
  • 1 tbsp Butter
  • 1 tbsp Garlic cloves
  • few florets Broccoli
  • 2 tbsp Corn kernals
  • 1/2 Mixed colour capsicum
  • As req Mixed herbs
  • As req Chilli flakes
  • As req Salt
  • 100 gm Cheese Mozzarella and Cheddar

Instructions
 

Prepare the Creamy Pumpkin Sauce

  • Heat oil in a pan and sauté all the ingredients for the pumpkin sauce, except the milk.
  • Cook until the vegetables become soft and aromatic.
  • Remove from the heat and allow the mixture to cool completely.
  • Transfer the cooled mixture to a mixer jar.
  • Add the milk and blend until you get a smooth, creamy puree.

Cook the Millet Pasta

  • Measure the required quantity of millet pasta and keep it ready.
  • Bring a large pot of water to a rolling boil.
  • Add salt to the boiling water.
  • Add the millet pasta and cook until done.
  • Avoid overcooking, as the pasta will cook a little more when mixed with the sauce.
  • Drain the pasta using a colander.
  • Rinse it briefly under cold water to stop the cooking process and prevent sticking.

Prepare the Pumpkin Sauce Pasta

  • Heat a little oil in a wide pan.
  • Add finely chopped garlic and sauté until fragrant.
  • Add your favourite vegetables and sauté until they are tender yet slightly crisp. I used:
    Zucchini
    Baby corn
    Bell peppers (Capsicum)
  • Pour the prepared pumpkin sauce into the pan and mix well.
  • Add salt to taste and allow the sauce to simmer for 2–3 minutes.
  • Add the cooked millet pasta and gently toss until every piece is evenly coated with the creamy pumpkin sauce.
  • Sprinkle mixed herbs and chilli flakes.
  • Give everything a final toss and cook for another minute.
  • The Pumpkin sauce pasta is ready to serve.
