Ingredients
  

Dry ingredients

  • 1 Cup Whole Wheat flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • A pinch Salt
  • 1 tbsp Corn flour
  • 2 tbsp Cranberry

Wet ingredients

  • 1 Cup Orange juice
  • 1/2 Cup Sugar
  • 1/4 Cup Oil
  • 1/2 tbsp Orange zest

Instructions
 

Extract Fresh Orange Juice

  • Take fresh oranges and extract the juice. Avoid adding any extra water to the juice to maintain the natural citrus flavor.

Prepare Orange Zest

  • Gently shred the orange peel using a zester or grater to obtain the orange zest. This will infuse the cake with a refreshing citrus aroma.

Mix Wet Ingredients

  • In a mixing bowl, combine oil and sugar. Whisk them together until the sugar dissolves completely.
  • Add the freshly extracted orange juice and orange zest to the mixture. Stir well to combine.

Sift Dry Ingredients

  • In a separate bowl, sift together the whole wheat flour, baking powder, baking soda, salt, and corn flour. This ensures a smooth and lump-free batter.

Combine Wet and Dry Ingredients

  • Gradually fold the sifted dry ingredients into the wet mixture using the cut-and-fold method. This helps retain the batter's lightness.

Prepare the Cranberries

  • Dust the dried cranberries with a teaspoon of wheat flour to prevent them from sinking to the bottom of the cake.
  • Gently fold the cranberries into the batter.

Prepare the Baking Pan

  • Grease a baking pan with oil and line it with butter paper to ensure the cake doesn’t stick.
  • Pour the batter into the prepared pan and tap it gently to level the surface.

Bake the Cake

  • Preheat your oven to 180°C (350°F) for 3 minutes.
  • Place the pan in the oven and bake the cake at 180°C for 35–40 minutes.
  • Check for doneness by inserting a toothpick into the center of the cake. If it comes out clean, the cake is ready.

Cool and Unmold the Cake

  • Remove the pan from the oven and allow the cake to cool completely.
  • Once cooled, invert the pan onto a plate and gently tap to release the cake.

Slice and Serve
