Pumpkin Paratha
Niranjana Sankaranarayanan
Pumpkin Paratha is a soft, wholesome, and delicious Indian flatbread made with whole wheat flour, fresh pumpkin puree, and optionally a blend of aromatic spices. Naturally rich in nutrients and subtly sweet, pumpkin adds moisture to the dough, resulting in incredibly soft parathas without the need for excessive oil.

- 2 Cups Wheat flour
- 2 Cups Pumpkin
- As req Salt
- 2 tsp Ghee
- As req Water
Peel the pumpkin and cut it into large chunks.
Steam the pumpkin until it becomes soft and is cooked through.
Transfer the cooked pumpkin to a mixing bowl and mash it until smooth, with no large lumps remaining.
Add the whole wheat flour and salt to the mashed pumpkin. Mix everything well using your hands to form a soft dough. (Avoid adding water unless absolutely necessary, as the pumpkin provides enough moisture.)
Cover the dough and let it rest for 15 minutes.
Divide the dough into equal-sized portions and roll each portion into a smooth ball.
Lightly dust your work surface or a silicone mat with whole wheat flour. Place a dough ball on it and roll it out into a thin, round paratha, just as you would roll a chapati.
Heat a tawa over medium heat and place the rolled paratha on it.
Cook until small bubbles appear, then apply a little ghee on the surface. Flip the paratha and spread ghee on the other side.
Cook both sides until golden brown spots appear and the paratha is fully cooked.
Serve the Pumpkin Paratha hot with pickle, vegetable sabji, yogurt, or raita for a wholesome and satisfying meal.
