Karnataka Chutney podi

Karnataka Chutney Podi, also known as Chutney Pudi, is a flavourful and aromatic spice powder that is a staple in many households across Karnataka. This traditional condiment is made by roasting lentils, spices, and dried red chillies and grinding them into a coarse powder. It is widely loved for its nutty flavour, mild spiciness, and rich aroma, making it a perfect accompaniment to many South Indian dishes.

Ingredients
  

  • 1.5 Cup Channa dal
  • 1 Cup Urad dal
  • 1/4 Cup Groundnut
  • 15 no Bedigi Chilli
  • 10 no Guntur Chilli
  • Small piece Jaggery
  • Small piece Tamarind
  • As req Salt

Instructions
 

  • Dry roast each ingredient separately in a kadai.
  • Add chana dal to the kadai and roast it on medium flame until it turns golden brown. Transfer it to a plate.
  • Add urad dal and roast it until it becomes golden brown and aromatic.
  • Roast the groundnuts until they turn crisp. Keep them aside.
  • Roast the dry coconut lightly until fragrant.
  • Finally, roast the dried red chillies until they become hot and aromatic.
  • Transfer all the roasted ingredients to a mixie jar.
  • Add tamarind, jaggery, and salt.
  • Grind everything into a fine powder. You can also keep it slightly coarse for better texture.
  • Your Karnataka Chutney Podi is ready.

Notes

Serve it as a side dish for idli or dosa by mixing a spoonful of chutney podi with a teaspoon of oil or ghee.
