Besan Chilla Waffle
Niranjana Sankaranarayanan
Besan Chilla Waffle (Savoury Chickpea Flour Waffle) is a healthy, protein-rich twist on the classic Indian besan chilla. Instead of cooking the batter on a tawa, it's made in a waffle maker, giving it a beautifully crisp exterior and a soft, fluffy interior. Prepared with gram flour (besan), onions, vegetables, herbs, and aromatic spices, this savoury waffle is quick, nutritious, and perfect for breakfast, evening snacks, or a light meal.

- 1 Cup Besan flour 250 ml
- 2 tbsp Rice four
- 2-3 no Green chilli
- few Curry leaves
- few Coriander
- 1 no Onion finely chopped
- 1/4 tsp Turmeric powder
- As req Salt
- As req Water
In a large mixing bowl, combine besan (gram flour) and rice flour.
Add the finely chopped onion, green chilli, and fresh curry leaves.
Sprinkle in the turmeric powder and salt.
Mix all the ingredients well until the vegetables are evenly coated with the flour.
Gradually add water, stirring continuously to make a smooth, lump-free batter.
The batter should be thick yet pourable, similar to a regular besan chilla batter.
Preheat the waffle maker and lightly grease the plates with oil.
Pour the prepared batter onto the hot waffle maker, spreading it evenly without overfilling. Close the lid and cook until the indicator light changes (or until the waffle is golden brown and crisp, depending on your waffle maker).
Once cooked, carefully remove the waffle. It should be crispy on the outside and soft and fluffy on the inside.
Serve the Besan Chilla Waffles hot with green chutney, tomato ketchup, or your favourite dip. They also pair wonderfully with coconut chutney or a cup of hot masala tea.
