Gond / Edible gum ladoo

Gond  ladoo or Edible gum ladoo is a winter special ladoo made in North India with wheat flour, edible gum or gond, some nuts, sugar and ghee. It is a nutrient dense ladoo as we have added nuts, seeds  and dried dates in it. I learnt this recipe from one of my friends and I have posted that version beforehand itself. Gond is also called as edible gum in English and Dink in Marathi. It is believed that Gond / Edible gum ladoo will help in reducing leg pain and strengthen the bone. 
Types of Gond
There are two types of gum or gond available in India.
Tragacanth gum which is called as badam pisin in tamil. It has cooling properties and is used in Summer. The most popular one is jigarthanda.
Acacia gum is the one that we have used in this recipe. It gives heat to the body and is used widely in Winters. It helps in keeping the body warm. Also it is given to nursing mothers for lactation and to strengthen the backbone.
Important points
Please avoid it during pregnancy since it is heaty and increases the body heat.
Gond has to be deep fried else it will not puff up. The raw gond can cause stomach problems. 
We can add foxnuts or makhana, flax seeds, more nuts and seeds.
Usually unrefined sugar which is called as khandsari is used as a sweetener. But we can also use powdered refined sugar or jaggery.

  • 2 cups Wheat flour
  • ½ cup Edible gum / Gond 100 gm
  • ½ cup Ghee
  • 1 cup Cane sugar
  • cup Almonds
  • cup Cashews
  • cup Pistachios
  • ½ cup Dried dates
  • ¼ cup Dried coconut
  • ½ cup Pumpkin seeds
  • cup Melon seeds
  • 1 tbsp White pepper powder
  • ½ tbsp Dried ginger powder


  • In a pan add ghee, edible gum. Roast the edible gum or gond until it pops up. Then drain the excess ghee and remove it from the pan.
  • In the same pan, add the wheat flour, roast it until the colour changes. At first you will get a nice aroma and then the colour changes. During the entire time of roasting, keep the flame low-medium.
  • Once done remove it from the pan.
  • Now crush the roasted edible gum with a masher. In the same plate add the roasted wheat flour. Mix the roasted gond and wheat flour.
  • Add 2 tbsp of ghee in the pan, then add the cashews, almonds, pistachios. Roast it in ghee and transfer it to a mixie jar.
  • And then add the dried dates or chuvara into the pan. Remove the seeds and keep it aside. We can also roast them after removing the seeds.
  • Roast it well and transfer to the mixie jar.
  • Next add the pumpkin seeds, melon seeds, roast it.  Add it to mixie jar.
  • Finally roast the dried coconut. Add it along with other ingredients to be ground.
  • Once cooled down, grind the nuts, seeds, coconut and dried dates coarsely.
  • Add this mixture into the wheat flour and gond mixture.
  • Finally add the cane sugar and mix everything well.
  • Start making small balls and the edible gum or gond ladoos are ready.
