Difference between Cookies and Biscuits
Though we use the term cookie and biscuit as synonym, they differ.Cookies are generally chewy and Biscuits are more firm.Cookies contain more sugar than biscuits.Usually the cookies will melt in mouth but the biscuits donot.
Role of main ingredients
It acts as a leavening agent. It gives a nice flavour to the biscuit and adds moisture.
Sugar can be used in granulated or powdered form. In some, biscuits both the types are used. They give sweetness to the biscuits. Along with butter they give tenderness to the biscuits.
Baking powder
Baking powder is used to increase the volume and lighten the texture of baked goods. It works by releasing carbon dioxide gas into the dough through an acid-base reaction and thus leavening the mixture.
