Tricolour Dosai - Independance Day Special

Tricolour dosai – What does that mean? how can we make it? So a lot of questions might arise when we hear the name. Let me tell you the reason for its name. I have used three coloured batter to make this dosai. The theme is based on Indian flag. It has saffron, white and green colour with Ashoka Chakra in the centre. So I want to make something special for Independance day. That was how this dosai is born. And the most important point is there are no artificial colours in this recipe. All the three batters have unique flavour and they go best with coconut chutney.

INGREDIENTS

    White batter

    • 1 small cup Dosai batter

    Orange batter

    • 1 small cup Dosai batter
    • 1 No Tomato
    • 2 Nos Red chilli

    Green batter

    • 1 small cup Dosai batter
    • 1 cup Coriander leaves
    • 2 Nos Green chilli non spicy one use depending on the spiciness

    Instructions
     

    To prepare batter

    • Take three cups and add the dosai batter in all the three cups.
    • Keep one cup aside and this will be used as the white batter.
    • For the orange batter, grind tomato and red chilli into a fine puree.
    • Mix it with the second cup of the dosai batter. There should be no lumps. The batter should be smooth.
    • For the green batter, grind coriander leaves and green chillies with little water,
    • Add this into the third cup of batter.
    • Now keep all the three batter ready.

    To make Dosai

      Method 1

      • Heat the skillet and sprinkle water to check the hotness of the tawa.
      • Take a small portion of the orange batter and spread it like a crescent on the top.
      • Then take the white batter and spread it below the orange batter like a rectangle.
      • Finally take the green batter and spread it below the white batter like an inverted crescent.
      • The dosai will now appear like a circle.

      Method 2

      • Heat the skillet and sprinkle water to check the hotness of the tawa.
      • Take a small portion of the orange batter and spread it like a rectangle on the top.
      • Then take the white batter and spread it below the orange batter like a rectangle.
      • Finally take the green batter and spread it below the white batter like rectangle.
      • The dosai will now appear like a big rectangle.

      Final step

      • Drizzle oil and cook the dosai in medium flame.
      • Once the bottom side is cooked, flip and cook on the other side too.
      • Remove the dosai from flame and serve it with coconut chutney.
