It is very simple, delicious and goes best with vegetable stew and Coconut chutney.<\/p>\n<p><a href=\"http:\/\/superduperkitchen.files.wordpress.com\/2013\/01\/photo1060.jpg\"><img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter\" id=\"i-737\" alt=\"Image\" src=\"http:\/\/superduperkitchen.files.wordpress.com\/2013\/01\/photo1060.jpg?w=800\" \/><\/a><\/p>\n<p><em>INGREDIENTS<\/em><\/p>\n<p style=\"text-align:center;\">Raw rice- \u00a01 cup<\/p>\n<p style=\"text-align:center;\">Par-boiled rice &#8211; 1 cup<\/p>\n<p style=\"text-align:center;\">Coconut milk &#8211; 4 cups<\/p>\n<p style=\"text-align:center;\">Dry yeast &#8211; 1 tsp<\/p>\n<p style=\"text-align:center;\">Sugar &#8211; 1 tbsp<\/p>\n<p style=\"text-align:center;\">Baking Soda &#8211; A pinch<\/p>\n<p style=\"text-align:center;\"><a href=\"http:\/\/superduperkitchen.files.wordpress.com\/2013\/01\/photo1059.jpg\"><img data-recalc-dims=\"1\" decoding=\"async\" id=\"i-739\" alt=\"Image\" src=\"http:\/\/superduperkitchen.files.wordpress.com\/2013\/01\/photo1059.jpg?w=800\" \/><\/a><\/p>\n<ul>\n<li>Soak raw rice and par-boiled rice in water for 12 hrs. Drain it and grind it to a fine batter.<\/li>\n<li>Dissolve yeast in 2 tbsp of milk and mix it in the batter. Allow it to ferment for 24 hrs.<\/li>\n<li>Take 1 coconut, grate it and add 2 cups of water and grind it. Coconut milk is ready and keep it aside.<\/li>\n<li>After 24 hrs, the batter would have raised.<\/li>\n<li>Now add the coconut milk, baking soda, sugar to the raised batter. Mix well. The batter should be slightly watery. Now you have the batter ready to be made into aapam.<\/li>\n<li>Take a deeper non-stick tava and gently coat it with 1tsp oil. So that the batter wont stick to the pan. This is done only before making first aapam.<\/li>\n<li>Take one ladle of the batter and pour it in the center of the tava. Now slowly rotate so that the batter forms a thin layer on the sides leaving the center portion thick.<\/li>\n<li>Cover it with a lid and cook until you see the outer layer leaving from the tava.<\/li>\n<li>The center will be fluffy.<\/li>\n<li>Serve with Coconut chutney or Vegetable stew.<\/li>\n<\/ul>\n<p style=\"text-align:left;\">Note: I substitute coconut milk with cow milk and found it equally good.<\/p>\n<p style=\"text-align:left;\">\n<p style=\"text-align:left;\"><a href=\"http:\/\/superduperkitchen.files.wordpress.com\/2013\/01\/photo1058.jpg\"><img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter\" id=\"i-738\" alt=\"Image\" src=\"http:\/\/superduperkitchen.files.wordpress.com\/2013\/01\/photo1058.jpg?w=800\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Aapam &#8211; Queen of kerala is a fermented flat bread made out of rice.
