They are made with dhal and tamarind extract. There are a wide variety of kuzhambu and I learnt this podi potta kuzhambu from my mom. Obviously it was her mom&#8217;s recipe. Though this is not made daily, when we are bored with Araithuvitta kuzhambu\/Sambar, amma make this.<a href=\"http:\/\/superduperkitchen.files.wordpress.com\/2013\/02\/img_3444.jpg\"><img data-recalc-dims=\"1\" decoding=\"async\" class=\"size-full wp-image aligncenter\" id=\"i-1506\" alt=\"Image\" src=\"http:\/\/superduperkitchen.files.wordpress.com\/2013\/02\/img_3444.jpg?w=800\" \/><\/a><\/p>\n<p><em>INGREDIENTS<\/em><\/p>\n<p style=\"text-align:center;\">Tamarind &#8211; 1 lemon size<\/p>\n<p style=\"text-align:center;\">Toor dhal &#8211; 4 tbsp<\/p>\n<p style=\"text-align:center;\">Any vegetable &#8211; 1\/2 cup<\/p>\n<p style=\"text-align:center;\">Rasam podi &#8211; 1 tsp (refer posting on Dec 4th)<\/p>\n<p style=\"text-align:center;\">Turmeric powder &#8211; A pinch<\/p>\n<p style=\"text-align:center;\">Salt- As required<\/p>\n<p style=\"text-align:center;\">Jaggery- A pinch<\/p>\n<p style=\"text-align:center;\"><strong>For Seasoning<\/strong><\/p>\n<p style=\"text-align:center;\">Gingelly oil- 1 tsp<\/p>\n<p style=\"text-align:center;\">Fenugreek &#8211; 1 tsp<\/p>\n<p style=\"text-align:center;\">Green chilly &#8211; 1<\/p>\n<p style=\"text-align:center;\"><a href=\"http:\/\/superduperkitchen.files.wordpress.com\/2013\/02\/img_3446.jpg\"><img data-recalc-dims=\"1\" decoding=\"async\" id=\"i-1505\" alt=\"Image\" src=\"http:\/\/superduperkitchen.files.wordpress.com\/2013\/02\/img_3446.jpg?w=800\" \/><\/a><\/p>\n<ul>\n<li>Pressure cook the tamarind and Toor dhal in two separate vessels.<\/li>\n<li>If you are going to use vegetables like potato, carrot, white pumpkin, pressure cook it\u00a0along\u00a0with the tamarind and toor dhal.<\/li>\n<li>Sweet pumpkin, onion, Avaraikkai can be cooked directly in an open vessel.<\/li>\n<li>Keep the heavy bottomed vessel\/ pan in the stove.<\/li>\n<li>Extract juice from the tamarind and pour it into the pan.<\/li>\n<li>To this add the vegetable you are going to use, turmeric powder, salt, jaggery and rasam podi.<\/li>\n<li>Mix everything well and allow it to boil.<\/li>\n<li>Meanwhile mash the toor dhal well and add water if required.<\/li>\n<li>Pour the toor dhal into the pan and allow it to cook until it forms froth.<\/li>\n<li>If you find the gravy too watery, then mix 1 tsp Corn flour\/rice flour with 1\/2 glass water and pour into it.<\/li>\n<li>Finally sputter fenugreek, green chillies in gingelly oil and season it.<\/li>\n<li>It can be served with rice, dosa, adai, idiyaappam.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Kuzhambu is a dish common in South india that is served as a side for the rice.
