Paruppu Usili is a beloved South Indian dish that hails from the Tamil Brahmin community. It combines protein-rich lentils with vegetables like green beans, cluster beans, or banana flower to create a healthy and flavorful side. This dish is known for its unique texture and balanced flavors, making it a staple in traditional Tamil homes.
What is Paruppu Usili?
The name “Paruppu” means lentils, and “Usili” refers to crumbled or coarse in texture.
The dish essentially involves stir-frying crumbled, steamed lentils with vegetables and spices. Cooks typically use a combination of toor dal (pigeon pea lentils) and chana dal (split chickpeas), which they soak, grind, steam, and then crumble to create a soft, crumbly texture.
They then temper the dish with mustard seeds, urad dal, curry leaves, and dried red chilies, adding a subtle spice and aromatic flavor to the mixture. The result is a dry, crumbly side dish that is rich in protein and perfect to serve alongside rice dishes.
