Seven cup cake

Seven cup cake is one of the easiest burfi/cake varieties that requires very less time to make. I learnt this sweet from my mom. She makes this sweet in two ways- one in this method and the other using khova. This sweet is always special to me because this is the first recipe I posted on my blog. Now I have moved to my own website and would like to post the same recipe as the first one. But this time it is with video.

INGREDIENTS

Grated coconut  –  1 cup

Besan flour – 1 cup

Ghee – 1 cup

Milk – 1 cup

Sugar – 2.5 to 3 cups

  • Take a heavy bottomed pan. Add Besan flour and roast it.
  • Add ghee, grated coconut,milk,sugar to it and mix it thorughly.
  • Stir it continuosly for every 5 mintutes. this step should be repeated until you see the bubbles .
  • Grease the tray with ghee and pour the mixture into it.
  • Make pieces and it is ready to serve.

Badham Halwa

Badham Halwa is a rich dessert that does not require too much of ingredits. Also the method of preparing it is very easy. But a lot of patience is required to peel off the skin. Since I soaked the alomonds only for two hours, it took me an hour to peel them off. When I told my mom, she said soaking it overnight will make the skin to fall off automatically.  So if you have the plan to make badham halwa, soak the almonds overnight.

INGREDIENTS

Almonds – 1 cup

Sugar – 1/2 cup

Water – 1/2 cup

Food colour – A pinch

Rose essence – A drop

  • Soak the almonds in water for 3 hours or even overnight.
  • Drain the water and peel off the skin.
  • Grind it to a smooth paste.
  • In a kadai, add water and sugar. Prepare the sugar syrup of one string consistency.
  • Add the rose essence and food colour into it.
  • Finally add the ground badam paste and stir well.
  • Stir it continuously until it thickens . Pous it into a plate or another vessel.
  • Serve it hot or cold.

Gajrela

Gajrela is a popular Punjabi dessert which is also called as Ghajar ka Halwa. It is a rich Indian dessert made with fresh carrots, milk, butter, sugar and nuts.  When I visited my sister’s place once, my brother in law made this sweet and it was mouthwatering. From then on, I wished to make this at home but I didnot. Again I had an idea of making when ‘Krish’ asked me to make this for him . It made me to prepare this delicious dessert at home. Sssshhhhh!!!!!  I am going to surprise him with gajrela.

INGREDIENTS

Grated Carrot – 1 cup

Milk – 1 cup

Sugar – 1/4 cup

Butter – 1 tbsp

Cashew – To garnish

  • In a pan add butter and fry the cashews.
  • Add the grated carrot and sugar into the pan.
  • Saute it for five minutes. This allows the carrot and sugar to get blend with each other.
  • Add milk into the pan and stir continuously.
  • The mixture will thickens and will start leaving the sides.
  • Transfer it to a bowl and serve either chilled or hot.
